Individual Apple Pies

Preheat oven to 350 degrees.

Place sliced apples in a (well buttered) pie tin.

Sprinkle with a handful of unrefined sugar or any UnDiet-approved sweetener and (cinnamon, apple pie spice, pumpkin pie spice …).

Bake for 20-30 minutes until apples are soft. Roughly mash with a potato masher or fork right in the pie tin.

Scoop out the middle of one or more whole wheat bagels. Toast and butter. Or use thick slices of whole grain bread, or English muffins. You could also use whole wheat pitas or whole wheat tortillas. Heat and butter the inside of the pitas before stuffing with the cooked apples. Heat and butter the tortilla before rolling up around the cooked apples.

Pile the apple mixture on top of your bread of choice.

Tarragon Waldorf Salad

This salad is a grownup take on the traditional Waldorf Salad, suitable for a dinner party, the beach or a barbecue. If the salad will be sitting out for awhile you may want to use yogurt in place of mayonnaise.

In a bowl whisk together dressing ingredients:

2 tablespoons mayonnaise, or lowfat yogurt
1 tablespoon Dijon mustard
1 teaspoon unfiltered, unpasteurized apple cider vinegar
1/4 teaspoon unrefined sugar
1 teaspoon fresh tarragon, minced
sea salt and black pepper to taste

Add to bowl and lightly toss until coated with dressing

4 stalks celery, thinly sliced
1 medium apple, quartered & thinly sliced

Adults Only Grilled Apple Sandwich

Melt a little butter in a skillet over medium heat. Place 1 of 2 slices of whole grain bread topped with nondairy mozzarella cheese in skillet. Grill until lightly browned and cheese is melted. Remove to plate. Melt some more butter and add the other slice of bread topped with cheese.

While second slice is grilling spread first slice with Celery Pesto and top with thinly sliced apple. When 2nd slice is done spread it with more Celery Pesto and place on first slice of bread.

Apple Pie Pudding

This is more like a rich and creamy apple sauce than a pudding. Puree the following ingredients:

2 apples, peeled and cored (use a sweet apple not a green apple) or 1 cup sugar-free applesauce
1/2 teaspoon apple or pumpkin pie seasoning
1/2-1 teaspoon vanilla extract
1 banana
1 small pinch sea salt

If you want the pudding thicker stir in cooked oatmeal, uncooked instant or 1 minute oatmeal, crushed cookies or graham crackers, crushed cereal, or chia seeds. For variety, stir in: raisins, or  toasted walnuts. One of our favorite ways to have this pudding is with crushed boxed cookies. Homemade cookies won’t work. They have to be crispy like a ginger snap or a Famous Amos style chocolate chip cookies.

Quick & Easy Apple Pie Pudding

Mash 1 banana in a small bowl.  Stir in 1 cup applesauce and 1/4 to 1/2 teaspoon apple pie seasoning.

Stir either of the apple pie pudding recipes above into sugar-free vanilla pudding.

Pumpkin Pie Smoothie

This smoothie is like drinking pumpkin pie!
Place all ingredients in a blender & hit the puree button. Done!

  • 1/4 – 1/2 cup canned pumpkin
  • 2 cups nondairy milk
  • 1 – 2 tablespoons unrefined sugar or sweetener
  • 1/2 teaspoon pumpkin pie spice
  • 1 banana
  • 1 apple, peeled and cored or 1 cup silken tofu

I put measurements in my recipes to make it easier for readers, but if your comfortable guesstimating you’re more than likely to end up with a perfectly edible smoothie 🙂
