I like to make a double batch of this pudding to serve for dinner dessert, then again the next morning for breakfast.
Preheat oven to 350 degrees.
In pie plate or quiche pan stir together
- 1/2 cup heavy cream or mix of cream and nondairy milk or lo-fat buttermilk
- 1/2 cup softened butter or banana or mix of both
- 1/2 cup unrefined sugar
- 1/2 cup raisins
- 1 cup broken pecans or walnuts, preferably toasted
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup mashed silken tofu
Bake for 40-50 minutes until brown on top. Chill well and serve.
