Comfort Food Without The Calories – A Healthy Minestrone Soup

As fall starts to come the chill in the air starts to make you want warm comfort foods, instead of reaching for the creamy cheesy carbohydrate loaded concoction that you think might make you feel warm and cozy, go for another warm food that won’t wreak havoc on your diet. When looking for how to lose belly fat through your diet, this low-fat, healthy, Minestrone soup is a a great option. This lean soup is full of vegetables, and a great source of lean protein. Soup is an excellent meal choice when you’re watching your diet because it’s very filling. You want to be sure you stick to the water-based soups, and not cream based soups. Cream based soups are typically high in fat and calories.

Healthy Minestrone Soup Ingredients:
2 TBS olive oil
5 red potatoes, cubed
5 carrots, sliced
1 medium onion, chopped finely
3 cloves garlic, chopped
1 (6 oz) can tomato paste
1 (15 oz) can kidney beans, rinsed and drained
1 (15 oz) can garbanzo beans, rinsed and drained
1 (14 oz) can chicken broth
6 cups of water
3 TBS diced fresh basil
2 TBS diced fresh oregano
1 TBS salt
2 cups uncooked small shaped pasta

Combine olive oil, potatoes, carrots, onion and garlic in a large pot over medium heat. Mix in tomato paste, beans, water and broth. Add basil, oregano and salt. Cook for 30 minutes, or until vegetables are tender. Continue to stir. Add pasta to pot. Continue cooking until pasta is tender. You really can add any vegetables you want to this soup to up your servings of vegetables for the day. Also, to save yourself time you can use frozen vegetables, and pre-cook the pasta while the rest of the soup is cooking, and then stir it in at the end.

The Zone Diet – recipes to try

Egg and Prosciutto

1 Wasa Cracker (1 sheet)
2 hard boiled eggs – NO YOLKS
2 oz. prosciutto
1 cup grapes
3 almonds

 

Lemon and Fennel Salad

1½ cups feta – reduced fat crumbled

4 bulbs fennel

1½ cups pears, cubed

2 tablespoons raisins (soaked)

2½ lemons

2 Tsp. Zone Extra Virgin Olive Oil

1¼ cups white wine

1 Tbsp. sesame seeds

salt and pepper to taste

Thinly slice the fennel. Cut and discard the ends from the lemons, and then cut them into thin slices. Put the olive oil into a skillet over medium high heat. When thge oil is hot, add the fennel and lemons and cook for about five minutes. Pour the white wine into the saucepan and cook until reduced by half. Barely cover the fennel and lemons with water, adding salt, pepper and sesame seeds. Cook for about 20 minutes or until fennel is al dente, then turn off heat, add the pear and let sit, covered, until cooled. Before serving, toss with the raisins softened in cold water and the feta cut into small cubes.

 

Turkey Tips with Asparagus

6 ounces turkey breast

2 bell peppers

3 cups asparagus

1 cup canned pineapple cubes in light syrup (rinsed/drained)

2 teaspoons Zone Extra Virgin Olive Oil

vegetable broth

salt

Break off and discard the woody ends from the asparagus. Slice the asparagus . Cut peppers into thin strips. Cut turkey breast into 6 cubes and sauté in oil in a skillet over medium high heat until browned. Remove turkey from skillet and keep warm. Sauté the vegetables in the remaining juices in the skillet, adding a bit of vegetable broth and salt. Cook until vegetables are softened. Transfer vegetables and turkey to a plate. Serve with the pineapple for dessert.

Insanely Low Calorie Parmesan Chicken & Zucchini Fingers

Serves 4

I love this recipe for so many reasons. First, it’s a low cal version of two traditionally deep-fried menu items. Second, it’s so-o-o easy. Third, the kids lo-o-ove it! And fourth, I get to sneak in an extra two servings of veggies and nobody complains – at least not yet. Wait until they read this and realize the hoax I’ve been pulling.

Place 2 four ounce boneless skinless chicken breasts between 2 sheets of waxed paper or saran wrap. Pound with a mallet or heavy pan until each breast is approximately 1/4 inch thick. Cut chicken into 1 inch wide strips, then cut in half horizontally. Pat dry.

Trim 1 medium zucchini and slice lengthwise 1/4 inch thick, then trim to roughly the same size as the chicken fingers.

Arrange 3 shallow dishes or pie plates side by side. Place 1 cup soy flour that has been seasoned with salt and pepper in one dish, 4 egg whites or 1/2 cup egg substitute in the one next to it and 1/2 cup grated low fat Parmesan cheese in the last dish.

Stack one slice of zucchini on one slice of chicken. Dip each 2 layer finger in flour, egg and then cheese, pressing into cheese so that it adheres well. Use toothpicks to secure if needed.

Oil the grill, then spray both sides of each chicken finger with oil. Grill over medium heat 6 minutes per side.

Serve as is or with bottled pasta sauce or try this mildly spicy and deeply flavored dipping sauce.

Roasted Red Pepper Dipping Sauce

Place in blender jar:
1 sixteen-ounce jar roasted red peppers, drained
1 sixteen-ounce can fire-roasted tomatoes, drained
salt and pepper to taste

Calories per serving:
100 without dipping sauce. Add 7 calories for every tablespoon of dipping sauce that you use.

Taco Chicken

Spray 2 four ounce boneless skinless chicken breasts with an olive oil spray. Place contents of 2 taco seasoning packets in shallow dish or plate. Coat chicken with taco seasoning pressing chicken into seasoning so that it adheres well. Let chicken sit for 15 minutes.

Grill on lightly oiled grill over medium heat until cooked through, turning once, about 6 minutes per side.

Allow the chicken to rest for at least 10 minutes. Using 2 forks shred the chicken and place in a bowl.

Set up a selection of toppings for the chicken. This recipe assumes that each person will be using 1/2 a chicken breast or 1 cup of shredded meat for 2 or more tacos. Those who are interested in a low calorie meal should stick to the salsa and lettuce. Everybody else can indulge in their fave toppings.

Suggestions for Taco Toppings:

fresh salsa or chopped tomatoes
shredded lettuce
sliced olives (12/tablespoon)
guacamole (22/tablespoon) or small avocado cut into 6 slices (40/slice)
shredded low fat cheddar cheese (14/tablespoon)
low fat sour cream (20/tablespoon) or fat-free yogurt (9/tablespoon)
chopped cilantro
6″ soft corn tortillas (45/tortilla)
lettuce leaves for bunny style tacos

Calories per serving: 231 if using 1 cup shredded chicken bunny style with salsa only. Add to your calorie count from the list above if you’ll be adding items to your taco.

Stovetop Style

Any of the above recipes can be easily prepared using a lightly oiled saute pan instead of a barbecue grill or-r-r, wait for it …

Oven “Fried”

Spray one side of chicken with oil and place oiled side down on a bakers cooling rack resting inside a larger pan. Spray top of chicken with oil. Bake at 400 degrees for 20 minutes. Turn chicken and bake for an additional 20 minutes or until chicken is thoroughly cooked.

I will share with you one of my favorite lunch time meals. The reason I like this specific recipe so much is that it is very healthy, tasty, easy to make and it also includes fat burning foods that may help you lose weight. Guac and Roll

You can add a salad to keep you even fuller. Just make sure that if you add a salad that you use a low fat salad dressing and that you skip the croutons and the full cream feta cheese.

Low Calorie Recipes For You To Try

Brie Spread

16 one tablespoon servings – 67 calories per serving

1 cup of Brie cheese

1 container of Laughing Cow Cheese Light, 8 wedges, any flavor

Gently microwave ingredients just until soft. Use a fork or whip to blend together. Spread on:

  • tomato slices
  • whole grain crackers
  • celery sticks

Asparagus Pasta Salad

1 serving – 55 calories

2 spears asparagus

1/4 cup tomatoes, chopped

1 package Shirataki noodles

Break off and discard woody ends of asparagus. Slice asparagus into 1/4″thick rounds. Season with sea salt and black pepper and saute in a little olive oil over medium high heat until al dente. Add tomatoes and a pinch of seal salt and a dash of black pepper. Continue saueting until the tomatoes release their juices. While sauce is cooking prepare the pasta according to package directions.  When sauce is finished add pasta and toss until well combined. Serve immediately.

 

 

Cheeseburger Casserole

8  servings – 128 calories per serving

This is a makeover of the old classic “Cheeseburger Pie”. In this version ground turkey replaces the ground beef and we’re 86ing the crust altogether. Trust me, you won’t miss it.

1lb extra lean ground turkey

1/2 cup chopped onion

1 clove garlic, minced

2 tablespoons Worcestershire sauce

1 cup nonfat cottage cheese

1 egg

3/4 cup shredded lowfat Cheddar cheese

Preheat oven to 350
Brown turkey, onion & garlic in a large pan over medium high heat until turkey is browned. Stir Worcestershire sauce into turkey mixture. 

Pour turkey mixture into a lightly oiled pie plate.

In a medium bowl, mix cottage cheese with egg.  Pour cottage cheese mixture over turkey. Top with cheddar cheese. Place tomato slices on top and bake for 30-40 minutes until casserole is hot and bubbling.

Tomatoes in Spicy Dressing

The first time I made this recipe I was extremely impressed. It is one of the most delicious salads I have tasted yet.

Serves: 4
Number of fat burning foods: 3 (tomatoes, chili spice and avo oil)
Calories per serving:225
Fat per serving:17.5g
Ingredients:

  • 700g large ripe tomatoes, sliced
  • 1 red onion, sliced
  • 4 pickled gherkins

For the dressing:

  • 2 tablespoons avocado oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon chili powder
  • Salt and pepper to season

Instructions:
Cut the gherkins into thin slices length ways and then into thin strips. Mix all the dressing ingredients to make a dressing. Arrange half of the tomatoes in a dish, followed by some onions and gherkins. Continue layering until all the ingredients are done. Pour the dressing over the salad and leave to stand for 5 minutes before serving.

Pineapple Delight

1 large handful of fresh baby spinach

1/2 fresh pineapple

10 strawberries

1/2 cucumber

Juice in the order listed above. Pour over ice and drink up!

 

Virgin Bloody Mary

2 tomatoes

1 celery stalk

1 large carrot

1 cup chopped broccoli

1 cucumber

1/2 lemon – peeled

1 garlic clove

dash or two of hot sauce

Run everything through your juicer and enjoy!

So many of you have asked us for the drink Dr. Oz swears by that we had to end with this one.  This “green drink” is high in fiber, very low-cal and extremely rich in vitamins. You can make this in a juicer or a blender. If you’re making it in a blender be sure to chop all veggies and fruit first, juice and zest the lemon and lime and discard the rest, core and peel the apple, use only the leaves of the parsley.

2 cups spinach

2 cups chopped cucumber

1 head of celery

1/2 inch of teaspoon of ginger root

1 bunch parsley

2 apples

1 lime

1/2 lemon

Individual Apple Pies

Preheat oven to 350 degrees.

Place sliced apples in a (well buttered) pie tin.

Sprinkle with a handful of unrefined sugar or any UnDiet-approved sweetener and (cinnamon, apple pie spice, pumpkin pie spice …).

Bake for 20-30 minutes until apples are soft. Roughly mash with a potato masher or fork right in the pie tin.

Scoop out the middle of one or more whole wheat bagels. Toast and butter. Or use thick slices of whole grain bread, or English muffins. You could also use whole wheat pitas or whole wheat tortillas. Heat and butter the inside of the pitas before stuffing with the cooked apples. Heat and butter the tortilla before rolling up around the cooked apples.

Pile the apple mixture on top of your bread of choice.

More Recipes for Losing Weight – Creamy Rice Soup

Here’s another one of our UnDiet recipes for losing weight that also works for a vegetarian losing weight and adheres to the principles of food combining. Call it a three-fer!

I love Trader Joes! They are my go-to source for quick and easy meals. A few choice purchases and I have the makings for several entirely different meals. I recently picked up a small tub of their Parmesan Artichoke Dip which has a cream cheese base. I spread it on top of a toasted piece of their whole wheat naan bread, then added some thinly sliced fresh tomatoes. Delicious! Then I had some dental work and couldn’t chew for a few days. I didn’t want the artichoke dip to go to waste so I mixed up this Creamy Rice Soup and I was in heaven!

Remember that I put amounts in my recipes to make it easier to give my readers an idea of what I’m doing, but there is no need to use exact measurements. A large spoonful can serve as a 1/4 cup measure, a coffee mug (which is usually what I use to serve soup in) holds about 1 & 1/2 cups, etc.

This is not a chicken and rice soup recipe though because that would be a bad food combination. See the notes at the end of the post.

Stir together and heat until very hot:
2 cups broth (I used french onion broth but any vegetable broth will do)
1/2 cup cooked brown rice or brown rice pilaf

Alternatively you could use 2 cups of leftover whole grain pasta or shirataki noodles.

Remove rice from heat and stir in 1/4 cup each of Trader Joes Artichoke Parmesan Dip and diced soy cheese. Grab a spoon and I guarantee you’ll be in heaven too!

You can also add more rice so that you have a stew rather than a soup.

If you are not a vegetarian losing weight you might be tempted to stir in some cooked chicken or turkey for a very hearty soup but it’s not a good idea when practicing food combining to mix a grain (the rice) with a protein (chicken or turkey).

Sugar Free Sweetened Condensed Milk

I haven’t been able to find sugar free sweetened condensed milk in any store so I was ecstatic to come across this recipe for an easy way to make it.

Ingredients:

  • 1/2 cup cold water
  • 1 1/3 cups powdered milk
  • 3/4 cup Splenda granular
  • 1 teaspoon vanilla

Stir milk powder into cold water until dissolved.

Microwave 1 minute or until steaming. Stir in sugar and vanilla.

Cover and chill in the refrigerator.
